A continuous process of alcoholic fermentation from beet molasses-without sterilization treatment with cell recycle by sedimentation is being development in the Instituto de Fermentaciones Industriales (I.F.I.). The instalation included a stirred fermenter coupled with a lamella settler. The size of the settler depends on the sedimentation characteristics of yeast to be utilized, so in the strain evaluation both fermentation rate and flocculation ability were taking into account. In the fermentation rate screening a new method, quite different from the usual one and specific for continuous processes has been introduced. SUMMARY. INTRODUCTION. MATERIALS AND METHODS.
