Acid hydrolyzates of the cellulosic fraction of the thistle Onopordum nervosum containing 23 g/1 of glucose were tested for alcoholic fermentation. Eight different strains of microorganism belonging to the groups Saccharomyces cerevisiae, Kluveromyces marxianus, Pachysolen tannophilus and Zymomonas mobilis were assayed. No ethanol production ocurred when using Pachysolen and Zymomonas strains, and the best results were obtained with Saccharomyces cerevisiae 1701, having got a maximun ethanol yield (y p/s) of 0.50 g.g.-1.
